We LOVE granola at our house! Homemade granola that is. This recipe was created with a little help from one of my little men. We made it with the goal of making granola bars. Once the granola had cooled we realized this recipe was not only super good for granola bars, but oh so delicious crumbled in a bowl with almond milk. Our recipe is for granola bars turned granola cereal. It all depends on what you are in the mood to eat. It would also be delicious on top of yogurt or homemade ice cream.
Chewy Peanut Butter Granola
(Dairy & gluten free made with natural sugars)
4 cups Old Fashioned Oats (gluten free if needed)
1 cup Unsweetened Shredded Coconut
1 cup Pecan Pieces
8 Medjool Dates, pit removed & chopped in pieces (raisins would be delicious too)
1/2 cup Natural Creamy Peanut Butter
1/3 cup Coconut Oil
1/3 cup Pure Maple Syrup
1/2 cup Local Raw Honey (I used mesquite flavor, but any would be good)
1/2 tsp Salt
1 tsp Pure Vanilla
Preheat oven 325˚F
Combine oats, coconut, & pecans in a bowl, set aside.
In a pot on medium, melt together peanut butter, coconut oil, maple syrup, & honey. Add salt, vanilla & dates. Remove from from heat and mix in the dry ingredients.
Cover baking sheet with parchment paper. Pour granola on baking sheet and press into pan. Bake at 325° F for 15-20 minutes or until golden brown. Let cool completely then cut into bars. If you want to eat it as cereal, crumble the bar into a bowl and add milk. Enjoy!
